Italian potatoes

Here's a favourite recipe of mine that is quick, simple and packed full of flavour.

Slice potatoes leaving the skins on and put them in the microwave for 10 minutes. Remove and put them in a baking tray with with 1 red onion, cut into large chunks. Add a few sprigs of fresh rosemary, I whole garlic clove and season with salt and pepper. Slosh on some olive oil or butter and mix ingredients together. Put in the oven on 200c for about 20 mins or until golden brown. 

I serve this with some fresh French beans and oven baked pork belly slices. I added a dressing using olive oil, 1 teaspoon of mustard (I prefer whole grain) and a tablespoon of pure maple spread that I picked up on my last trip to Canada (it's so good on toast too!)
